Bahamian Cocoa

Ingredients
  Firmly packed brown sugar 1⁄4 Cup (4 tbs)
  Unsweetened cocoa 1⁄4 Cup (4 tbs)
  Water 1 Cup (16 tbs)
  Skim milk 4 1⁄2 Cup (72 tbs)
  Grated orange rind 1 Tablespoon
  Rum extract 1 Teaspoon
Directions

Combine sugar and cocoa in a medium saucepan; stir until blended.
Stir in water.
Bring to a boil over medium heat.
Reduce heat; slowly stir in milk.
Cook until thoroughly heated, stirring constantly.
Remove from heat, and stir in orange rind and rum extract.
Beat at medium speed of an electric mixer until frothy.
