Broiled Lamb Chops Mission Style
|Dry white wine||1⁄2 Cup (8 tbs)|
|Olive oil/Cooking oil||1⁄4 Cup (4 tbs)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Snipped parsley||1⁄4 Cup (4 tbs)|
|Garlic||1 Clove (5 gm), minced|
|Lamb chops||6 , cut 3/4 inch thick|
In a small bowl combine the wine, olive oil, onion, parsley, salt, pepper, and garlic.
Place the lamb chops in a shallow baking pan.
Pour wine mixture over the lamb chops.
Cover and let stand 2 hours at room temperature or place in the refrigerator about 5 hours, spooning the marinade over several times.
Remove the lamb chops and reserve the marinade.
Place the lamb chops on rack of a broiler pan; brush with the reserved marinade.
Broil 3 inches from the heat for 6 to 8 minutes.
Turn the chops; brush with additional reserved marinade.
Broil 6 to 7 minutes longer.
