Caribbean Yam Bake
|Cooked mashed yam||3 Cup (48 tbs)|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Margarine||1⁄4 Cup (4 tbs), melted|
|Dark rum||2 Tablespoon|
|Ground nutmeg||1⁄2 Teaspoon|
|Lemon zest||1 Tablespoon (Zest Of 1 Lime)|
|Lime juice||3 Tablespoon (Juice Of 1 Lime)|
|Bananas||2 , peeled and diced|
In large bowl, combine mashed yams with eggs, brown sugar, margarine, rum (if used), nutmeg, Jime zest and juice until thoroughly mixed.
Fold in diced bananas.
Turn into shallow greased 5-cup baking dish.
Bake in 375Â°F oven 40 minutes.
