Jamaican Style Chicken

  Chicken medallions 2
  Onion 1⁄2 , chopped
  Garlic 1 Clove (5 gm), chopped
  Hot pepper 1⁄2 , chopped
  Orange juice 50 Milliliter (1/4 Cup)
  Sauce 1 Tablespoon
  Corn oil 1 Teaspoon (5 Milliliters)
  Wine vinegar 1 Teaspoon (5 Milliliters)
  Jamaican pepper 1 Teaspoon (5 Milliliters)
  Thyme 1 Teaspoon (5 Milliliters)
  Sugar 1 Teaspoon (5 Milliliters)
  Black pepper 1 Teaspoon (5 Milliliters)
  Cinnamon 1⁄4 Teaspoon (1 Milliliter)
  Nutmeg 1⁄4 Teaspoon (1 Milliliter)
  Tabasco sauce 6 Drop
Directions

Place the chicken in a glass dish.
Combine ail of the other ingredients in a bowl and mix thoroughly.
Pour the mixture over the chicken, taking care to coat everything evenly.
Cover and refrigerate overnight.
Remove the chicken from the marinade; drain well.
Place the chicken on a cooking plate and cook in the oven at 230°C (450°F) for 20 to 25 minutes, brushing the chicken lightly with the marinade while cooking.
