|Sweet potato||1 Large, peeled and sliced into 0.25 inch rounds|
|Bananas||2 , peeled and sliced diagonally into thick pieces (Red Colored)|
|Whole chicken breast||1 , skinned, boned and halved|
|Chopped fresh cilantro||2 Teaspoon|
|Serrano chilies||2 , trimmed, seeded and finely chopped (Fresh)|
|Lime||1 Large, juiced|
|Heavy cream||4 Tablespoon|
Rub a l 1/2 quart casserole with 1 teaspoon butter; layer in sweet potatoes and top with bananas.
Tuck chicken breasts in and sprinkle with cilantro and chiles.
Pour lime juice over chicken and add peel.
Dot with remaining butter.
Bake, covered, in 350 degree oven for 35 to 40 minutes, until edges of sweet potatoes are golden and caramelized.
Add cream, heat for additional 10 minutes, then serve very hot.
