Drunk and Laid Out Caribbean BBQ Chicken

I'm not a big fan of chicken, but after making this, I'm reconsidering chicken all over again! This is by far the best chicken I've ever eaten, and that ain't to BS! Give it a try, and see what I mean )

Ingredients

Chicken 1 , spatchcocked
Coarse salt To Taste
Finely ground black pepper To Taste
Cayenne pepper 1 Tablespoon
Barbecue sauce 1/2 Cup (8 tbs)
Beer 36 Ounce ((3 Cans of 12 Ounce each))

Directions

GETTING READY

1. Prepare the grill with lump charcoal and pimiento wood for cooking. Place a deflector plate, a dripping beer with beer and bring the temperature upto 350 F. 

 

MAKING

2. Place the chicken on the grill and let it cook for about an hour or until the meat starts to withdraw from the bone. Mop the chicken with Pirate Jhony's barbecue sauce and let it cook for another 15 to 20 minutes. 

3. Brush the remaining barbecue sauce over the chicken and cook for a 10 more minutes.

 

SERVING

6. Slice and serve the chicken.
