The swizzle is a classification of a cocktail. "Rum swizzles" have been mentioned in literature since the late 18th century and originated, like many rum drinks, in the caribbean. Instead of shaking or stirring a swizzle, the drink is, well, "swizzled" with a special stick made from the Quararibea turbinata tree. If you don't have access to the authentic version, a bar spoon will do the trick.
|Spiced rum||1 1/2 Fluid Ounce|
|Port wine||1/2 Fluid Ounce|
|Fresh pineapple juice||1 Fluid Ounce|
|Fresh lime juice||1/2 Fluid Ounce|
|Simple syrup||1/2 Fluid Ounce|
|Peach bitters||1 Dash|
|Aromatic bitters||1 Dash|
|Ice cubes||1 Cup (16 tbs) , crushed|
|Lime wheel||1 (For Garnish)|
1. Take spiced rum, fortified wine, fresh pineapple juice, simple syrup, lime juice, peach bitters and aromatic bitters in a glass.
2. Fill the glass with crushed ice and swizzle the bar spoon in between your palms to mix the drink.
3. Garnish with a lemon wheel and a tiki and serve.
If you do no have crushed ice available. Place the ice cubes in a towel and smash it up with a muddler.
