Creamy Spaghetti Carbonara

Ingredients
  Spaghetti 14 Ounce (400 Gram)
  Olive oil 1 Tablespoon
  Smoked pancetta cubes/Streaky bacon 8 Ounce, smoked (200 Gram)
  Eggs 2
  Double cream 121 Milliliter
  Grated parmesan 2 Ounce (50 Gram)
  Garlic 2 Clove (10 gm), crushed
Directions

1. Boil the pasta according to pack instructions. Meanwhile, heat the oil in a frying pan, then fry the pancetta or bacon in until golden but not too crisp.
2. Beat the eggs, yolk, cream and cheese together. Add garlic to the bacon pan, then fry for 1 min. Drain the pasta and tip into the hot pan, off the heat.
3. Pour egg mixture over pasta, followed by the garlicky pancetta and any fat. Toss quickly and thoroughly. The sauce will become smooth and creamy. Serve with extra cheese and freshly ground pepper.
