Put the sugar in a bowl and add 3-4 tablespoons of water.
Microwave on HIGH for 7 minutes until the caramel is a deep golden color (remember that it will continue to cook for a few minutes once it is removed from the oven).
Add 3 (2) tablespoons of hot water, taking care to avoid splashing.
Microwave on HIGH for 1 further minute until smooth.
