Caramel Tapioca Cream

Ingredients
  Butter 2 Tablespoon
  Brown sugar 1 Cup (16 tbs)
  Quick cooking tapioca 2 Tablespoon
  Milk 2 Cup (32 tbs)
  Eggs 2 , separated
  Salt 1⁄4 Teaspoon
  Vanilla 1 Teaspoon
Directions

Heat butter and 3/4 cup sugar slowly.
Stir until it boils, cook about 1 minute or until sugar is slightly caramelized.
Add tapioca and milk.
Cook until tapioca is clear, then pour slowly onto 2 egg yolks mixed with salt.
Cook in double boiler and stir occasionally until thickened.
Remove from heat and pour mixture over egg whites beaten until stiff with remaining brown sugar.
Stir and add vanilla when slightly cool.
Serves 8.
