Candied Bell Pepper Caramel
|Minced yellow bell pepper||3⁄4 Cup (12 tbs)|
|Minced red bell pepper||3⁄4 Cup (12 tbs)|
|Granulated sugar||1 Cup (16 tbs)|
|Apple cider||1 Cup (16 tbs)|
|Grand marnier||2 Tablespoon|
|Unsalted butter||3 Tablespoon (At Room Temperature)|
1. In a medium-sized, heavy, nonreactive saucepan, combine the peppers, sugar, and cider. Cook, stirring occasionally, for about 30 minutes, or until the sauce turns golden brown, thickens, and caramelizes.
2. Remove from the heat and whisk in the Grand Marnier and butter. Cover and refrigerate. Reheat gently before using.
