Pecan Caramels

Ingredients
  Light brown sugar 3 Cup (48 tbs) (Tightly Packed)
  Butter 1⁄4 Cup (4 tbs)
  Heavy sweet cream 1 Cup (16 tbs)
  Cinnamon 1 Pinch
  Pecan meats 1 1⁄2 Cup (24 tbs)
Directions

Mix sugar, butter, and cream in heavy pan or kettle.
Cook until soft-ball stage (236°F.on a candy thermometer).
Remove from heat.
Add cinnamon.
Beat until almost cold.
Add nuts.
Drop by spoonfuls onto marble slab or wax paper.
