|Superfine sugar||3 Ounce (1/2 Cup / 75 Grams)|
|Water||45 Milliliter (3 Tablespoon)|
Place the sugar and water in a deep bowl and, cook for 4 - 5 minutes or until golden.
Remove from the oven using gloves as the dish will be very hot.
Let it cool until the liquid thickens slightly.
Scoop a small amount of caramel into a spoon and pour it slowly back into the bowl. The mixture will stiffen and you will be able to draw it into threads to decorate various desserts.
Decorate just before serving as the sugar dissolves if left standing too long.
