Black Walnut Caramels
|Sugar||7 Cup (112 tbs)|
|Dark corn syrup||7⁄8 Cup (14 tbs)|
|Cream||1 Cup (16 tbs)|
|Butter||1⁄2 Cup (8 tbs)|
|Black walnuts||1⁄2 Cup (8 tbs), chopped|
Combine sugar, corn syrup, 1/2 cup cream and butter in heavy saucepan; bring to a boil.
Stir in remaining cream slowly; candy should remain at a boil.
Cook to firm-ball stage.
Remove from heat.
Add vanilla and black walnuts; turn into greased shallow pan.
Cut into cubes; wrap separately in waxed paper.
