Caramel Filling

  Brown sugar 1 Cup (16 tbs) (firmly packed)
  All purpose flour 3 Tablespoon
  Evaporated milk 1 Cup (16 tbs)
  Egg yolks 2 , slightly beaten
  Butter/Margarine 2 Tablespoon, softened

Combine sugar and flour in a saucepan; gradually stir in milk.
Cook over medium heat, stirring constantly, until mixture thickens and boils.
Boil 1 minute, stirring constantly; remove from heat Gradually stir about one-fourth of hot mixture into yolks; add to remaining hot mixture, stirring constantly.
Return to a boil and boil 1 minute, stirring constantly.
Remove from heat; add butter, stirring until butter melts.
Let cool.
