Cream Filled Cannoli

Cannoli is not only an Italian dessert but it has become an extremely popular dessert all over & is also popular in Italian American cuisine.
Ingredients
  Flour 1 Cup (16 tbs)
  Sugar 1 Tablespoon
  Butter 1 Tablespoon
  Salt 1 Pinch
  White wine 1⁄4 Cup (4 tbs)
Directions

Mix all ingredients well. Shape into ball. Roll very thin. Cut into 3 x 3 inch squares. Shape onto cannoli sticks. Fry in very hot oil until lightly browned. Remove and drain on paper towels. Gently remove pastry from cannoli sticks. Cool and fill with your favorite cream filling.

I dont know if you can help mewith this,i have tried several recipies for canolli filling and i cannot come up with a recipe that would taste like the cream came from a good bakery like Ferrara's, I dont know what im doing wrong , but all that i have tried seem to have the same ingrediens, but they dont pass the taste test. Can you help?

Mix 3/4 cup ricotta strained in cheesecloth overnight and squeez water out and 3/4 cup of mascarpone cheese..this is how Brooklyn bakeries do it

is there anything else in it...I am in fla and want to make this for my hubby who's from Brooklyn...thanks

Sicilian version is just whole milk, flavoring & cornastarch cooked until very thick & heavy so it won't run out of the shell, I coat the inside of the shell with melted chocolate to prevent pudding from making the shell soft. for a richer version you can also add whipped mascarpone cheese to the pudding.
