Ingredients
  Pistachio nuts 2 Ounce, shelled
  Ricotta cheese 15 Ounce (1 Container)
  Sugar 1⁄3 Cup (5.33 tbs)
  Ground cinnamon 1 Teaspoon
  Vanilla extract 1 Teaspoon
  Confectionery sugar 1⁄2 Cup (8 tbs)
  Dessert crepes 8
Directions

Coarsely chop pistachio nuts in blender or Sunbeam Food Processor.
Empty onto a sheet of waxed paper.
Add ricotta cheese, sugar, cinnamon, and vanilla extract to blender or food processor.
Process until smooth.
Fill Dessert Crepes with 2 tablespoons of mixture.
Freeze until ready to serve.
When serving, sprinkle crepe with chopped nuts and confectioners sugar.
