Mixed Raisin Candy

  Sugar 4 Cup (64 tbs)
  Whipping cream 2 Cup (32 tbs)
  Light corn syrup 2 Tablespoon
  Raisins 9 Ounce
  Chopped pecans/Walnuts 2 Cup (32 tbs)
  Flaked coconut 1 Cup (16 tbs)
  Semi sweet chocolate morsels 2 1⁄2 Cup (40 tbs)
  Shortening 1⁄2 Tablespoon

Combine first 3 ingredients in a heavy saucepan; stir well.
Bring to a boil, stirring often; cook to soft ball stage (234°).
Remove from heat; cover and chill 1 to 2 hours.
Stir in raisins, pecans, and coconut; shape into 1-inch balls.
Combine chocolate and shortening in top of a double boiler; bring water to a boil.
Reduce heat to low; cook until chocolate melts.
Place several candy balls in chocolate mixture; roll with spoon to coat evenly.
Remove with a wooden pick or spoon, allowing excess chocolate to drain off.
Place on waxed paper to cool.
Continue process until all candy balls are coated.
Cover and store in refrigerator.
