Almond Potato Candy

Ingredients
  Mashed potatoes 1⁄2 Cup (8 tbs) (Prepared Without Milk And Butter)
  Whole blanched almonds 2 Cup (32 tbs), finely ground
  Confectioners sugar 2 Cup (32 tbs)
  Baking cocoa 1 Tablespoon
  Almond extract 1 Teaspoon
  Semisweet chocolate chips 2⁄3 Cup (10.67 tbs), melted
  Confectioners sugar/Ground almonds 1 Ounce (In Addition)
Directions

In a bowl, combine the mashed potatoes, almonds, sugar, cocoa and almond extract; mix well.
Add melted chips and stir well.
Cover and refrigerate for several hours.
Shape teaspoonfuls into balls; roll in sugar or almonds.
