Almond Potato Candy
|Mashed potatoes||1⁄2 Cup (8 tbs) (Prepared Without Milk And Butter)|
|Whole blanched almonds||2 Cup (32 tbs), finely ground|
|Confectioners sugar||2 Cup (32 tbs)|
|Baking cocoa||1 Tablespoon|
|Almond extract||1 Teaspoon|
|Semisweet chocolate chips||2⁄3 Cup (10.67 tbs), melted|
|Confectioners sugar/Ground almonds||1 Ounce (In Addition)|
In a bowl, combine the mashed potatoes, almonds, sugar, cocoa and almond extract; mix well.
Add melted chips and stir well.
Cover and refrigerate for several hours.
Shape teaspoonfuls into balls; roll in sugar or almonds.
