Candied Rhubarb Serendipity
|Rhubarb||1 1⁄2 Cup (24 tbs), finley diced|
|Sugar||1 1⁄2 Cup (24 tbs)|
1) In a saucepan, sprinkle sugar over rhubarb and allow to stand for 6 to 8 hours or overnight, stirring occasionally
2) Gently simmer the mixture until the syrup is boiling, without stirring.
3) Allow the candy to cool, without stirring.
4) Serve the candied rhubarb over cake, ice cream or other desserts.
