Black Walnut Molasses Candy
|Molasses||1 1⁄2 Cup (24 tbs)|
|Sugar||1 Cup (16 tbs)|
|Light cream/Evaporated milk||1 Cup (16 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Walnuts||3⁄4 Cup (12 tbs), finely chopped|
Mix molasses, sugar, and cream in a large, heavy saucepan, drop in butter, and insert candy thermometer; heat, stirring constantly, over moderately low heat until sugar dissolves.
Cook uncovered, moving a wooden spoon across bottom of pan occasionally (but not actually stirring) to 250° F. or until a drop of candy forms a hard ball in cold water.
Off heat, add soda, then nuts and stir just to blend.
Pour into a well-buttered 9"x9"x2" pan; do not scrape pan.
Cool 15 minutes, score in 1" squares and, when hardening but still pliable, turn out on a baking sheet.
Cool to room temperature and cut in 1" squares.
Wrap each piece and store airtight.
