Chewy Ginger Cookies

Ingredients
  Shortening 3⁄4 Cup (12 tbs)
  Sugar 1 Cup (16 tbs)
  Egg 1 , beaten
  Molasses 1⁄4 Cup (4 tbs)
  All purpose flour 2 Cup (32 tbs)
  Baking soda 2 Teaspoon
  Salt 1⁄4 Teaspoon
  Ground ginger 2 Teaspoon
  Ground allspice 2 Teaspoon
  Sugar 1⁄4 Cup (4 tbs)
Directions

Beat shortening at medium speed of an electric mixer until creamy; gradually add 1 cup sugar, beating well.
Add egg and molasses, mixing well.
Combine flour and next 4 ingredients, stirring well.
Gradually add flour mixture to creamed mixture, mixing well.
Cover and chill 1 hour.
Shape dough into 1-inch balls, and roll balls in 1/4 cup sugar.
Place 2 inches apart on lightly greased cookie sheets.
Bake at 375° for 9 minutes.
Remove from cookie sheets, and let cool on wire racks.
