|Sugar||2 Cup (32 tbs)|
|Baking soda||1 Teaspoon|
|Buttermilk||1 Cup (16 tbs)|
|Butter||3⁄4 Cup (12 tbs)|
|Pecans||2 Cup (32 tbs), chopped|
Combine sugar, soda, buttermilk and margarine in large glass bowl.
Cover with plastic wrap; punch holes in wrap.
Microwave on High for 2 1/2 minutes; stir and turn dish.
Continue cooking for 15 minutes, stirring every 5 minutes.
Return to micro wave for 2 minutes or until soft ball forms in cold water or until it tests 236° on a candy thermometer.
Add vanilla and beat with electric mixer until soft peaks form Watch closely.
Stir in pecans and spread in buttered 12 x 7-inch dish.
Cool; cut into pieces.
