Chewy Ginger Cookies

Ingredients
  Shortening 3⁄4 Cup (12 tbs)
  Sugar 1 1⁄4 Cup (20 tbs), divided
  Egg 1
  Molasses 1⁄4 Cup (4 tbs)
  Vanilla extract 1 Teaspoon
  All purpose flour 2 Cup (32 tbs)
  Ground cinnamon 1 Teaspoon
  Ground ginger 1 Teaspoon
  Baking soda 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Ground cloves 1⁄2 Teaspoon
Directions

In a mixing bowl, cream shortening and 1 cup sugar.
Add the egg, molasses and vanilla; mix well.
Combine dry ingredients; add to creamed mixture and mix well.
Roll into 1 -in.balls; roll in remaining sugar.
Place 1-1/2 in apart on ungreased baking sheets.
Bake at 375° for 10 minutes or until lightly browned.
Cool on wire racks.
Store in an airtight container
