Mozzarella Vegetable Canapes

Ingredients
  Garlic 1 Clove (5 gm), minced
  Carrots 1⁄2 Cup (8 tbs), finely chopped
  Radishes 1⁄2 Cup (8 tbs), finely chopped
  Onion 1⁄4 Cup (4 tbs), finely chopped
  Green bell pepper 2 Tablespoon, finely chopped
  Lite mayonnaise 2 Tablespoon
  Low fat plain yogurt 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Rye crackers/Melba rounds 48 Small (Crisp Ones)
  Part skim mozzarella cheese 4 Ounce, cut into 48 small slices
  Paprika 1 Teaspoon
Directions

Preheat oven to 500 degrees.
In a small bowl combine carrots, radishes, onion, green pepper, mayonnaise, yogurt, garlic, salt and pepper; mix well.
On each cracker spread 1/2 tablespoon mixture.
Top with mozzarella slice and sprinkle of paprika.
On baking sheet place canapes.
Bake for 5 minutes.
Serve immediately.
