Crab Gelatin Canapes
|Agar agar flakes/Unflavored gelatin||2 Tablespoon|
|Sherry||1⁄3 Cup (5.33 tbs)|
|Mayonnaise||1 Cup (16 tbs)|
|Lemon juice||1 Tablespoon|
|Yogurt||1⁄2 Cup (8 tbs)|
|Fresh crab||1 Cup (16 tbs), flaked|
Soften agar-agar flakes in sherry for 5 minutes, then dissolve in top of double boiler over hot water.
When cool, add mayonnaise, cayenne, and lemon juice.
Then stir in yogurt, adding salt and pepper to taste.
Chill mixture until it begins to thicken, then add crab.
Spoon mixture into a 2-1/2 cup mold which has been lightly oiled.
Chill several hours or overnight.
Unmold on a serving tray and circle with rye crackers.
