Floating Island

The floating island is a cooked dessert made with milk eggs and sugar. Flavored with a dash of vanilla, the floating island is topped with meringues and chilled. I like to serve the floating islands with a cherry topping on the meringues.
Ingredients
  Eggs 3
  Salt 1⁄8 Teaspoon
  Sugar 8 Tablespoon
  Vanilla 1⁄2 Teaspoon
Directions

MAKING
1.Follow directions for soft custard, using two egg-yolks and one whole egg
2.Cool and turn the custard into a glass dish or into custard cups
3.Beat the two egg whites until stiff and beat into them two to four tablespoons of fine granulated or powdered sugar
4.Drop this meringue by spoonfuls on the custard and chill thoroughly
SERVING
5.Serve at room temperature or cold
TIPS
A candied cherry or a small bit of red jelly placed on each spoonful of meringue adds to the attractive appearance of the dish
