A blend of mushrooms and beef keeps these quick cooking loaves lower in cholesterol and saturated fat than a traditional meatloaf.
Blending finely chopped mushrooms with meat is easy! Mushrooms and ground meat blend seamlessly to add an extra serving of vegetables to the plate by enhancing, extending or replacing the meat. |Canola oil||1 Tablespoon|
|Onion||1/2 , chopped|
|Apple||1 , peeled and chopped|
|Lean ground beef||12 Ounce|
|Grated part skim cheddar cheese||1/2 Cup (8 tbs)|
|Unseasoned breadcrumbs||1/2 Cup (8 tbs)|
|Maple syrup||2 Tablespoon|
|Dijon mustard||2 Tablespoon|
|For mushrooms canada spice blend:|
|Dried thyme leaves||1/2 Teaspoon|
|Dried oregano leaves||1/2 Teaspoon|
|Dried minced garlic||1/4 Teaspoon|
|Dried minced onion||1/4 Teaspoon|
In a bowl, mix maple syrup with mustard and keep it ready.
Line a baking tray with aluminium foil.
Preheat the oven to 400F (200C).
4. In a food processor finely chop mushrooms.
5. Drizzle oil in a saucepan and sauté chopped onion and chopped apple. Add 1 tablespoon of mushroom Canada cheese blend and cook the mixture.
6. In a large mixing bowl, grated cheese, breadcrumbs, eggs, salt and pepper. Add the blended mushrooms, minced meat and sautéed contents and gently mix to combine the ingredients.
7. Divide the mixture into 4 mini loaves using hands and place them on a baking tray. Brush the maple syrup mix on the loaves halfway through cooking and bake the contents. Cook for an additional 10 to 15 minutes or until an instant read thermometer registers 160F (71C) when inserted into the centre of a loaf.
