Panocha is a hot fudge made with brown sugar ,butter, milk and nuts amongst other things. Cooked over heat, the panocha is flavored with vanilla and combined with light cream for a delicious taste and texture. Served with a chocolate sauce, panochas are quite a delight to indulge in on winter evenings.
In Directions

Butter sides of heavy 2 quart saucepan.
In it combine 1 1/2 cups granulated sugar, 1 cup brown sugar, 1/3 cup light cream, 1/3 cup milk, and 2 tablespoons butter.
Heat and stir over medium heat till sugars dissolve and mixture comes to boil.
Then cook to soft ball stage (238°), stirring only if necessary.
Immediately remove from heat and cool to lukewarm(l 10°) without stirring.
Add 1 teaspoon vanilla.
Beat vigorously till fudge becomes very thick and starts to lose its gloss.
Quickly stir in 1/2 CUP broken California walnuts or pecans.
Spread in buttered shallow pan or small platter.
Score in squares while warm.
Cut when firm.
