|Smelts||2 Pound, heads off, cleaned and washed|
|Eggs||2 , beaten|
|Flour||1⁄2 Cup (8 tbs)|
|Dried bread crumbs/Cracker crumbs||1⁄2 Cup (8 tbs)|
|Fat||2 Cup (32 tbs) (For Frying)|
Drain smelts as dry as possible on paper towels.
Mix eggs, milk, and seasonings in a bowl.
Mix flour and bread crumbs together on a large piece of wax paper.
Dip each smelt in the liquid and then in crumbs.
Heat fat in skillet.
Add smelts, cooking them until crisp and brown.
If deep fat is used, cook about 1G minutes.
If you prefer less fat, cook about 5 minutes per side.
Drain on paper towels and serve.
