Here is my spin on a classic fast food Canadian dish. Poutine originated in Canada and has spread through out the world. This dish is extremely easy to make, the only hard part is locating Cheese Curds. Poutine is typically made with Chicken Gravy served over french fries and Curds.
My son Jordan was my Sous Chef and wanted to help out on this cook.
1 Pound, cut into pieces
For the gravy
Beef stock/Chicken stock
2 Cup (32 tbs)
For the french fries
4 Medium, peeled, cut into sticks
2 Cup (32 tbs) (For deep frying)
For The Gravy
1. In a pan melt butter on medium heat, then add the flour and mix well. Cook for a few minutes while stirring continuously till it changes to pale yellow color.
2. Pour the stock slowly in batches while whisking continuously to avoid forming lumps. Cook for a few minutes or till it reaches the desired consistency, while stirring frequently. Turn off the heat.
For The French Fries
4. In a deep frying pan heat oil on medium heat. Once the oil is hot put the potato sticks in batches and fry them till golden brown. Transfer onto paper towel to drain off excess oil.
5. In a serving plate spread the french fries ta the bottom. Spread the cheese curd over it and pour the gravy on top. Serve hot.
