|Medium white sauce||2 Cup (32 tbs)|
|Grated cheese||2 Tablespoon|
|Frozen spinach||20 Ounce, cooked, drained and chopped (2 packages, 10 ounce each)|
|Chopped onion||2 Tablespoon|
|Sliced mushrooms||1 Cup (16 tbs)|
|8 inch crepes||12 (plain)|
|Grated swiss cheese||1⁄2 Cup (8 tbs)|
Prepare white sauce, adding at least 2 tablespoons grated cheese.
To the spinach, add the chopped onion and mushrooms, previously sauteed in the butter or margarine.
Cook 5 minutes.
Fill the crepes.
Arrange, seam side down, in shallow buttered baking dish.
Coat with sauce.
Sprinkle with grated Swiss cheese.
Bake at 350° 10 minutes.
Then broil until cheese is golden.
