Crepes Gismonda

Ingredients
  Medium white sauce 2 Cup (32 tbs)
  Grated cheese 2 Tablespoon
  Frozen spinach 20 Ounce, cooked, drained and chopped (2 packages, 10 ounce each)
  Chopped onion 2 Tablespoon
  Butter/Margarine 2 Tablespoon
  Sliced mushrooms 1 Cup (16 tbs)
  8 inch crepes 12 (plain)
  Grated swiss cheese 1⁄2 Cup (8 tbs)
Directions

Prepare white sauce, adding at least 2 tablespoons grated cheese.
To the spinach, add the chopped onion and mushrooms, previously sauteed in the butter or margarine.
Cook 5 minutes.
Fill the crepes.
Arrange, seam side down, in shallow buttered baking dish.
Coat with sauce.
Sprinkle with grated Swiss cheese.
Bake at 350° 10 minutes.
Then broil until cheese is golden.
