Roll well chilled dough to 1/4-inch thickness.
Cut 3-inch rounds with cookie cutter.
Remove 2-inch centers from 1/2 the rounds.
Moisten edges of full rounds, and lightly press 1 ring shape on top of each.
Place well apart on ungreased cookie sheet.
Bake in 500°F oven 5 minutes; then lower heat by 50°F at 5 minute intervals until temperature is down to 350°F.
Bake about 10 minutes at 350°F.
Makes 12-16 large patty shells or 24-30 small shells.
Note: The cut-out centers from the rings may be baked and used as lids for filled patty shells.
