|Pork liver||3⁄4 Pound|
|Canned tomatoes/Tomato juice||3⁄4 Cup (12 tbs)|
|Dry bread crumbs||1⁄2 Cup (8 tbs)|
|Prepared mustard||2 Teaspoon|
|Dry bread crumbs/Flour||1⁄4 Cup (4 tbs)|
|Melted drippings||1 Tablespoon|
Cover and cook liver in salted water about 10 minutes.
Drain and cool.
Mince liver and onion together; add tomatoes, 1/2 cup crumbs, mustard and seasonings.
Form into 5 or 6 cylindrical croquettes.
Roll each in crumbs or flour, and encircle with bacon.
Secure with toothpicks, brush with melted drippings and bake at 400 Ã‚Â°F. about 20 minutes or until bacon is crisp.
