Liver-Bacon Croquettes

Ingredients
  Pork liver 3⁄4 Pound
  Onion 1⁄2 Small
  Canned tomatoes/Tomato juice 3⁄4 Cup (12 tbs)
  Dry bread crumbs 1⁄2 Cup (8 tbs)
  Prepared mustard 2 Teaspoon
  Salt To Taste
  Pepper To Taste
  Dry bread crumbs/Flour 1⁄4 Cup (4 tbs)
  Bacon slices 6
  Melted drippings 1 Tablespoon
Directions

Cover and cook liver in salted water about 10 minutes.
Drain and cool.
Mince liver and onion together; add tomatoes, 1/2 cup crumbs, mustard and seasonings.
Form into 5 or 6 cylindrical croquettes.
Roll each in crumbs or flour, and encircle with bacon.
Secure with toothpicks, brush with melted drippings and bake at 400 °F. about 20 minutes or until bacon is crisp.
