Directions

Tie leg to tail, and skewer wing fiat against body.
Place, skin side up, on rack in roasting pan.
Completely cover with cheesecloth dipped in melted fat, or rub bird with fat and cover loosely with foil.
Roast at 325 °F., allowing 3 1/2-4 hours for 5—8 pounds.
Dressing may be cooked under bird if foil is placed over rack; or bake it separately in greased casserole.
