Quick-cook Cherry-Gooseberry Conserve
|Cherries||2 Cup (32 tbs), pitted|
|Gooseberries||2 Cup (32 tbs)|
|Sugar||7 Cup (112 tbs)|
|Liquid pectin||6 Ounce|
|Almonds||1 Cup (16 tbs), shredded|
Put fruit through mincer, or blend 2 minutes.
Combine sugar and fruit in deep saucepan, and stir until sugar is dissolved.
Heat to full rolling boil, and boil 1 minute.
Remove from heat, stir in pectin, skim and stir 1 minute.
Mix in almonds.
Pour into jars immediately, and seal with hot paraffin.
