Baked Canadian Back Bacon with Apricot Sauce
|Back bacon||2 Pound|
|Lightly packed brown sugar||1⁄4 Cup (4 tbs)|
|All purpose flour||1 Tablespoon|
|Ground cloves/Allspice||1⁄4 Teaspoon|
|Maple syrup||1⁄4 Cup (4 tbs)|
|Dijon mustard/Prepared mustard||1 Tablespoon|
|For apricot sauce|
|Apricot nectar||1 Cup (16 tbs)|
|Canned apricot halves||14 Ounce, drained (1 Can, 398 Milliliter)|
Glaze: In small bowl, combine sugar, flour and cloves.
Stir in maple syrup and mustard.
Spread half the glaze over top and sides of bacon.
Bake, uncovered, in 350 °F (180°C) oven for 1 hour, basting after 30 minutes with remaining glaze.
Transfer to platter and keep warm while preparing Apricot Sauce, if using.
Apricot Sauce: Stir flour into pan drppings, blending well.
Bring to boil over medium heat, stirring constantly.
Stir in apricot nectar; cook, stirring, until sauce thickens.
Add appcot halves and simmer for 2 minutes.
Pass sauce in separate bolwl to pour over bacon.
