French Canadian Pea Soup
|Ham bone||1 Pound|
|Yellow peas||1 Pound, dried|
|Celery||3⁄4 Cup (12 tbs), chopped, soaked overnight|
|Carrot||1⁄2 Cup (8 tbs), grated|
|Onion||1⁄4 Cup (4 tbs), grated|
|Water||2 Cup (32 tbs) (To Cover, Add More As Necessary)|
1. In a saucepan boil all ingredients together slowly until peas are soft, about 2 1/2 hours and add salt and pepper to taste.
2. Let the mixture cool whereby it may tend to thicken.
3. To thin to the desired consistency, add a little milk and serve.
