French Canadian Pea Soup

Ingredients
  Ham bone 1 Pound
  Yellow peas 1 Pound, dried
  Celery 3⁄4 Cup (12 tbs), chopped, soaked overnight
  Carrot 1⁄2 Cup (8 tbs), grated
  Onion 1⁄4 Cup (4 tbs), grated
  Thyme 1⁄4 Teaspoon
  Water 2 Cup (32 tbs) (To Cover, Add More As Necessary)
Directions

MAKING
1. In a saucepan boil all ingredients together slowly until peas are soft, about 2 1/2 hours and add salt and pepper to taste.
2. Let the mixture cool whereby it may tend to thicken.

SERVING
3. To thin to the desired consistency, add a little milk and serve.
