Rhubarb Crisp With Oatmeal
|Flour||1 Cup (16 tbs)|
|Oatmeal||3⁄4 Cup (12 tbs)|
|Brown sugar||1 Cup (16 tbs)|
|Margarine||1⁄2 Cup (8 tbs), melted|
|Rhubarb||4 Cup (64 tbs), diced|
|White sugar||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
Preheat oven to 350 degrees.
Mix flour, oatmeal, brown sugar, cinnamon, and melted margarine until crumbly.
Divide in half, press one half of mixture into bottom of 9x9-inch pan.
Cover bottom layer with 4 cups diced rhubarb.
In medium saucepan, combine white sugar, cornstarch, water, and vanilla.
Cook until thickened and clear.
Pour over rhubarb.
Pat remaining crumb mixture on top.
Bake at 350 degrees for 1 hour.
