Buttery Hush Puppies
|Cornmeal||2 Cup (32 tbs)|
|All purpose flour||1⁄2 Cup (8 tbs)|
|Baking powder||2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Egg||1 , beaten|
|Buttermilk||1 Cup (16 tbs)|
|Onion||1⁄3 Cup (5.33 tbs), finley chopped|
|Water||1⁄4 Cup (4 tbs)|
Combine cornmeal, flour, sugar, baking powder, soda, and salt.
Combine egg, buttermilk, onion, and water; stir into cornmeal mixture just till moistened.
In a skillet that is at least 3 inches deep, pour in oil to depth of 1 1/2 inches.
Heat oil to 375°.
Drop batter by tablespoonfuls into hot oil.
Fry till golden brown, turning once, about 2 minutes.
Drain on paper toweling.
Serve hot with butter.
