Canadian Bacon Stack Ups

Ingredients
  Whole cranberry sauce 1 Cup (16 tbs)
  Light corn syrup 2 Tablespoon
  Canned sweet potatoes 17 Ounce, drained (1 Can)
  Butter/Margarine 1 Tablespoon, melted
  Brown sugar 1 Tablespoon
  Ground ginger 1⁄4 Teaspoon
  Unsliced canadian bacon 1 Pound
Directions

Combine cranberry sauce and corn syrup in bowl.
Beat potatoes, butter, brown sugar, and ginger with electric mixer till light and fluffy.
Slice bacon into 12 pieces.
Arrange six slices in baking dish and spread half the potato mixture equally on each slice.
Cover with remaining bacon slices and top each with a mound of remaining potato mixture.
Drizzle cranberry sauce over stacks.
Bake at 350° for 45 minutes, basting once or twice with sauce in dish.
