Crispy Hush Puppies
|Oil||2 Cup (32 tbs) (For Deep Frying)|
|Yellow cornmeal||1 Cup (16 tbs)|
|All purpose flour||1⁄2 Cup (8 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Buttermilk||1 Cup (16 tbs)|
|Egg||1 , beaten|
|Chopped onion||1⁄4 Cup (4 tbs)|
1. Heat 2 to 3 inches oil to 365°F in deep fryer or deep saucepan.
2. Combine cornmeal, flour, baking soda and salt in large bowl. Stir in buttermilk, egg and onion. Mix well.
3. Drop by teaspoonfuls, a few at a time, into oil. Fry 2 minutes or until dark golden brown. Turn as needed for even browning. Remove with slotted metal spoon. Drain on paper towels. Serve immediately.
