Baked Canadian Bacon
|Canadian bacon||1 1⁄2 Pound (Unsliced)|
|Cooked green lima beans||2 Cup (32 tbs) (Or Canned)|
|Firm ripe tomatoes||3|
Place bacon in an open baking pan or roaster.
Bake in moderate oven of 350ºF., allowing 35 min per lb.—about 53 min.
Twenty minutes before the bacon is done, remove it from the oven, and arrange lima beans on one side of it.
Cut tomatoes into 1/2" crosswise slices; sprinkle with salt and pepper; and place cut side up on other side of bacon.
Then bake for the remaining 20 min.
