French Canadian Potato Salad

Ingredients
  Potatoes 8 Medium, peeled and boiled until just tender
  Parsley 3 Teaspoon, chopped
  Onion juice 1 Cup (16 tbs)
  Salad/Olive oil 2 Tablespoon
  Vinegar 1 Tablespoon
  Chicken consomme/Beef consomee 1⁄2 Cup (8 tbs)
  Salt To Taste
  Pepper To Taste
Directions

1.
Slice the hot potatoes into a bowl and immediately stir in the parsley, onion juice, oil, and seasoning to taste.
2.
Mix the vinegar and consomme., pour over the potatoes, mix gently, and let cool gradually, at room temperature.
Stir occasionally.
3.
Chill only about 1 hour before serving.
