French Canadian Potato Salad
|Potatoes||8 Medium, peeled and boiled until just tender|
|Parsley||3 Teaspoon, chopped|
|Onion juice||1 Cup (16 tbs)|
|Salad/Olive oil||2 Tablespoon|
|Chicken consomme/Beef consomee||1⁄2 Cup (8 tbs)|
Slice the hot potatoes into a bowl and immediately stir in the parsley, onion juice, oil, and seasoning to taste.
Mix the vinegar and consomme., pour over the potatoes, mix gently, and let cool gradually, at room temperature.
Chill only about 1 hour before serving.
