Canadian Bacon With Sweet Potatoes
|Sweet potatoes||1 1⁄2 Pound (About 4 Medium Sized)|
|Cooked canadian style bacon slices||1 1⁄4 Pound (6 Slices, Each About 1/2 Inch Thick)|
|Canned crushed pineapple||8 Ounce, drained (1 Can)|
|Packed brown sugar||2 Tablespoon|
|Ground cinnamon||1⁄4 Teaspoon|
1. Prepare and microwave sweet potatoes. Pare and cut crosswise into thirds.
2. Arrange Canadian bacon in rectangular dish, 11 x 7 x 1 1/2 inches. Place 2 sweet potato pieces on each slice bacon; top with pineapple. Mix brown sugar and cinnamon; sprinkle over pineapple.
3. Cover tightly and microwave on medium-high (70%) 10 to 12 minutes, rotating dish 1/2 turn after 5 minutes, until hot.
