Canadian Oatmeal Shortbread
|Butter/Margarine||1 Cup (16 tbs)|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Flour||1 Cup (16 tbs) (gold medal)|
|Rolled oats||2 Cup (32 tbs)|
Mix butter, sugar, and vanilla until fluffy.
Measure flour by dipping method or by sifting.
Blend flour, soda, and rolled oats; stir into butter mixture.
Chill 1 to 2 hr.
Heat oven to 350°
Roll dough 1/4 thick on lightly floured board.
Cut in 1 1/2" squares or fancy shapes.
Bake on ungreased baking sheet 10 to 12 min.
