Canadian Bacon And Yam Bake
|Canned pineapple chunks||13 Ounce (1 Can)|
|Green pepper strips||1 Cup (16 tbs) (2 X 1/4 Inch)|
|Condensed beef broth||10 1⁄2 Ounce (1 Can)|
|Lemon juice||2 Teaspoon|
|Dry mustard||1⁄2 Teaspoon|
|Canned sweet potatoes||16 Ounce (1 Can)|
|Canadian bacon||1 Pound, cut into 8 slices|
Drain pineapple reserving 1/3 cup syrup.
In saucepan, cook green pepper in butter until tender.
Stir in soup, reserved pineapple syrup, cornstarch, honey, lemon juice, and mustard.
Cook, stirring constantly until thickened.
In 1 1/2-quart casserole, arrange alternate layers of potatoes, bacon, pineapple, and sauce.
Cover; bake at 350 °F. for 45 minutes.
