Canadian Bacon And Yam Bake

Ingredients
  Canned pineapple chunks 13 Ounce (1 Can)
  Green pepper strips 1 Cup (16 tbs) (2 X 1/4 Inch)
  Butter/Margarine 2 Tablespoon
  Condensed beef broth 10 1⁄2 Ounce (1 Can)
  Cornstarch 2 Tablespoon
  Honey 2 Tablespoon
  Lemon juice 2 Teaspoon
  Dry mustard 1⁄2 Teaspoon
  Canned sweet potatoes 16 Ounce (1 Can)
  Canadian bacon 1 Pound, cut into 8 slices
Directions

Drain pineapple reserving 1/3 cup syrup.
In saucepan, cook green pepper in butter until tender.
Stir in soup, reserved pineapple syrup, cornstarch, honey, lemon juice, and mustard.
Cook, stirring constantly until thickened.
In 1 1/2-quart casserole, arrange alternate layers of potatoes, bacon, pineapple, and sauce.
Cover; bake at 350 °F. for 45 minutes.
