Ingredients
  Salt herring 6
  Onion 1 Large, thinly sliced
  White wine vinegar 3 Cup (48 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Mixed spice 2 Tablespoon
Directions

Wash herring under running water to remove salt.
Trim off heads and tails; soak in cold water overnight.
Next day, drain and fillet fish; cut into 2-inch pieces.
Pack layers of fish pieces and onion slices into wide-mouth jars.
Combine vinegar, sugar, and spices; simmer 5 minutes.
Cool and pour over herring to cover.
