Ingredients

Salmon fillet 1
Pomelo slice 3 , deseeded
Lemon slices 3 , deseeded
Lime slices 3 , deseeded
Freshly ground pepper To Taste
Citrus herb rub 1 Teaspoon (Napa Jack's)
Cayenne pepper To Taste
Tres cirtus balsamic vinegar 1 Tablespoon (Napa Jack's)

Directions

GETTING READY:

Preheat oven to 350F.

Line baking sheet with silicone mat or parchment paper.

MAKING:

Lay pomelo slices on baking sheet and place salmon fillet over it.

Season salmon with pepper, citrus herb rub, cayenne pepper and baste with balsamic vinegar.

Lay lemon and lime slices over salmon and pop into oven.

Bake for 20 minutes or until fish turns flaky.

Once done broil for 2 minutes.
