Canadian Pea Soup
|Dried whole yellow peas||500 Milliliter (2 Cups)|
|Cold water||2 Quart (2.5 Liters)|
|Onions||2 , chopped|
|Celery stalks||2 , chopped|
|Carrot||1 , chopped|
|Ham bone/3 or 4 slices salt pork||1 , chopped|
Place peas in a soup pot, cover with the cold water and soak overnight.
Next morning add the chopped vegetables, ham bone and bay leaf.
Bring to a boil, then lower heat, cover and simmer gently for 3 or 4 hours.
Stir mixture occasionally and add a little boiling water to keep soup at the right consistency.
Remove ham bone and add seasonings.
Amount of salt will depend on saltiness of ham bone.
