Canadian Pea Soup

Ingredients
  Dried whole yellow peas 500 Milliliter (2 Cups)
  Cold water 2 Quart (2.5 Liters)
  Onions 2 , chopped
  Celery stalks 2 , chopped
  Carrot 1 , chopped
  Ham bone/3 or 4 slices salt pork 1 , chopped
  Bay leaves 2
  Salt To Taste
  Thyme 1 Pinch
Directions

Place peas in a soup pot, cover with the cold water and soak overnight.
Next morning add the chopped vegetables, ham bone and bay leaf.
Bring to a boil, then lower heat, cover and simmer gently for 3 or 4 hours.
Stir mixture occasionally and add a little boiling water to keep soup at the right consistency.
Remove ham bone and add seasonings.
Amount of salt will depend on saltiness of ham bone.
